INGREDIENTS REQUIRED:
1/2 tsp dried basil
2 tbsp olive oil
2 1/2 cups chicken broth
1 cup long grain rice (uncooked)
1/2 cup shredded carrots
1 zucchini (FRUIT)
How to make it:
- In a skillet, saute rice and basil in olive oil for one minute; then add chicken broth and bring to a boil.
- Stir in the carrot.
- Reduce heat; cover and simmer for 20 minutes.
- Add zucchini slices and simmer another 5 minutes or until zucchini is tender.
